The tea picking process has strict requirements. Some pick only one young bud, some pick one bud and one leaf, or one bud and two leaves for the first time. The craftsmanship is also very particular, and there are ten major techniques in the frying process, such as shaking, banding, squeezing, straightening, buckling, grasping, pressing and grinding. The changes in operation are amazing.

When tasting, use a glass or lid to brew the soup at 85°c. The tea is bright and green in colour, and the fragrance is like orchids. The taste is sweet and refreshing.

The reason why Shifeng Lung Ching is famous is also thanks to Emperor Qian Lung. Legend has it that when Emperor Qian Lung went to the south of the Yangtze River, he came to the foot of Shifeng Mountain in Lung Jing, Hangzhou, and learned about tea ladies picking tea. After picking a handful, the eunuch suddenly reported: "The Queen-Empress is ill, please return to Beijing quickly."

Emperor Qian Lung rushed back to the capital and brought back a handful of dried tea from Shifeng Mountain in Hangzhou, exuding a strong aroma. The Queen-Empress wanted to taste the tea. She brewed the tea and had a sip, and instantly the swell and soreness faded, and her stomach was no longer bloated. The Queen-Empress expressed that, "The tea from Lung Jing, Hang Zhou is really a panacea." 

Emperor Qian Lung immediately ordered and gave the 18 tea trees planted in front of Hugong Temple at Shifeng Mountain in Lung Jing, Hang Zhou as the "Imperial Royal Tea", and to pick new tea every year as a yearly tribute the Queen-Empress.
