This is a French wine made from 80% Malbec and 20% Cabernet Franc (VDF), certified organic ECOCERT SAS FF32600.
Terroir: The first coast of Toucheronde faces south. The soil is made up of a variety of cobblestones (flint, terraces, marine(The soil is composed of small siliceous long-tailed stones (flint, terraces, sponges, etc.) that ensure a rapidly warming environment.
Harvesting: by hand. Once in the cellar, the grapes are destemmed and carefully placed in the barrels.
Winemaking: The vats are fermented for a long period of time (35 to 40 days) in favor of rich and concentrated material, with daily pressings at the beginning of fermentation and controlled temperatures of 25 to 28°C. After malolactic fermentation, the wine is aged in vats for a long period of 18 to 24 months.
Suggestion: It is best served between 16 and 18°C and is best served with red meats in sauces, game, and strong cheeses.
